Prawns are also an excellent source of many minerals, such as phosphorus, iron, copper, magnesium, zinc, as well as manganese, calcium and sodium. It is also rich in vitamins, especially vitamin B12, choline and niacin, as well as folic acid and riboflavin.

Eggplant cut into slices

Carrot cut into strips

Two slices of zucchini sliced ​​into slices

Mushrooms 5 to 6 pieces sliced

A large onion cut into strips

4 chopped garlic cloves

One quarter cup Soy sauce

Preparation Heat the oil in a large pan and fry the onions with garlic. Add slices of eggplant, carrots, squash and mushrooms and stir the mixture over the fire until the vegetables are partially cooked and maintain their crust. (Fire must be strong). Add the prawns to the mixture and follow the frying. Pour a quarter cup of soy sauce over the mixture and cook for a few minutes until the prawns become pink and the vegetables absorb all the sauce. This dish is served with boiled rice mixed with various vegetables (pea, carrots and lobes).
