Pumpkin Jam

Ingredients:
8 cups pumpkin puree (I used homemade roasted pumpkin)
3-4 cups sugar (varies according to desire)
2 Tbsp ground cinnamon
1 tsp ground ginger
Optional: 1 tsp orange zest
How to make it:
1. Melt sugar in a large, high pot on medium heat, stirring constantly (be careful not to burn it)
2. When the sugar melts, add the pumpkin and stir well
3. Add the spices & stir well
4. The pumpkin will release it’s water so there’s no need to add any liquids
5. The mixture will come to a boil, let it boil until reduced and reaches the desired jam texture, while frequently stirring (about 1-2 hours)
6. Once it does, turn off the heat and add the lemon juice & orange zest.
7. Let it cool completely and store in jars in the fridge
