Artichoke with shrimp filling


4 large, washed artichokes

½ kilo boiled and peeled shrimp

4 tablespoons lemon juice

2 tablespoons of olive oil

4 tablespoons of mayonnaise

Teaspoon white honey

Recovered teaspoon


teaspoon from saffron

3 tablespoons of minced parsley

¼ kilo of cherry tomatoes

Salt and black pepper


Remove the sharp ends of the artichoke with a knife

On medium heat, place the artichoke and two tablespoons of lemon, oil, salt and pepper, then cover the artichoke with water and leave it until soft.

Leave the artichoke to cool, then remove the heart with a spoon

In a bowl, put the mayonnaise, the rest of the lemon, honey, mustard, paprika, saffron, parsley, salt and pepper, and stir them well

Add shrimp to the mixture and stir well

Fill the artichoke with shrimp mixture

Place the artichoke in a serving dish with cherry tomatoes
